Today, he concentrates on his flagship brand, Rockpool, which includes an array of restaurants, and leads a team of consultants to Qantas Airways on menu development. He is also an author of five recipe books and a television presenter on The Lifestyle Channel.

If you like old world grandeur then The Peninsula Hong Kong is the place for you. In addition to boasting a vista rich location overlooking Hong Kong Island, the hotel is situated at the beginning of Nathan Road, an epicentre of power shopping.

If you want to splurge, indulge in the Peninsula’s Rolls Royce airport transfer service. Sitting in that car you’ll feel like you’ve been transported back in time.

If you love spas, then you’ll be very pleased with ESPA. Be sure to make the most of your time by arriving at least an hour early and lounging in the thermal room – the most amazing steam room, sauna and thermal rain shower experience. This is pampering to the extreme. The well-equipped gym complete with great equipment and a wonderful indoor pool is also quite special.

The views from the rooms are incredible. Some of the best you will find. Most rooms look directly out over Hong Kong Island – an ideal vantage point to take in the nightly light show.

High Tea in the foyer is famous and not to be missed. A spectacle in and of itself, it is as though all of Hong Kong converges on The Peninsula for scones, finger sandwiches and pastries every afternoon.

Don’t miss a nightcap at the Philippe Stark-designed Felix. Have a quiet drink in the bar while marvelling at the lights of Hong Kong.
