Today, he concentrates on his flagship brand, Rockpool, which includes an array of restaurants, and leads a team of consultants to Qantas Airways on menu development. He is also an author of five recipe books and a television presenter on The Lifestyle Channel.

We love the Upper House. It’s our home away from home. From the moment you arrive, you are welcomed into the family. You are taken by a member of the guest experience team to your room, and they are assigned to you for your entire stay – no queuing at a front desk, no stress, nothing but a warm welcome.

The rooms are beautifully modern and adorned with everything you need and nothing you don’t. Comfortable, spacious and modern the rooms feature an amazing, incredibly comfortable walk-around-bed backing onto a large dressing room. The bathrooms are brilliantly laid out – large double vanities lead guests into a separate room with an island bath and walk-in shower with incredible views and floor-to-ceiling windows.

Forget the mini bar, welcome to the maxi bar. All treats, non-alcoholic drinks and beer are free. Wi-fi is also free. Instead of the traditional hotel compendium, all the hotel info is on the room’s ipod touch (rumoured to be upgraded to ipads soon). How cool is that?

Don’t miss Gray Bar for a cocktail or two. This is really one of the best places to start an evening (or finish one). Gray is one of our favourite bars in Hong Kong. Also, do not miss the Peasant’s Margarita. With its a la carte breakfast menu, superb tea selection and sensational views breakfast in Gray Café is a superb option.
