SKYLOFTS at MGM Grand, Las Vegas, Nevada, United StatesFIAMMA Trattoria and Bar, designed by Yabu Pushelberg, features dishes by Carlos Buscaglia, who learned traditional recipes from his grandmother and mother in the family's Italian deli in Buenos Aires. His signature Lobster gnocchi, or made-today Raviolini, can be paired with over 400 different wines.

Rogerio Fasano, whose grandfather came from Milan over a century ago, presides over what many say is a cathedral of taste. He suggests one of his five-course Italian set menus, which, if you are lucky, may include his signature Risotto with white beans and Tuscan sausage, or a warm Sicilian lemon pie with hot chocolate sauce. Il Lago's Chef Marco Garfagnini comes from Carrera, of marble fame. Try his Cheese tortelli - made with egg yolks instead of water, to give an addictive golden tone - scented with lemon and mint, and Il Lago tiramisu. The rooftop La Pergola, headed by Chef-Patron Heinz Beck, is the only three Michelin-starred restaurant in town. Every night the restaurant is re-configured, depending on reservations, but it never does over 65 covers. Try Grilled La Perle Blanche oysters in parsley cream, Black cod with marinated anchovy or Liquorice-flavored suckling pig shoulder. | |
Florentine Maurizio Menconi, who honed his appetite when traveling worldwide with his father, cooks in La Scala, designed by Yasuhiro Koichi of Spin. Try his Wagyu beef carpaccio, Rocket and grilled artichoke salad, and Milk-fed veal chop eaten with a Laguiole knife - and you have an over-water outside terrace for a postprandial cigar. | |

You smell fresh-baked bread sticks as you enter the Bilkey Llinas-designed Grissini, with its panoramic views across the water to Kowloon (when dining, you can also watch the nightly cross-harbor laser show). The Portman Ritz-Carlton, Shanghai, ChinaPalladio, named for legendary 16th century Italian architect Andrea Palladio has a welcoming open kitchen with wood burning oven. Chef Francesco Greco's Hand-made spaghetti with Boston lobster and fresh organic tomatoes is a favorite, and the wine list, supervised by Maurizio Moncalvo, is highly rated by Zagat Shanghai. | |
