10 Questions: Anthony Syrowatka, Viceroy Bali

In our General Manager series, we catch up with heads of hotels for personal stories and insider perspective. This week, we get to know Anthony Syrowatka of Viceroy Bali.

Q Best hotel room at the property:
A

The Deluxe Terrace Villas because they were designed and built using guest feedback from the first six years of operating the resort. They have a Balinese bungalow perched dramatically atop the infinity pool overlooking the jungle.

Q The hotel’s most interesting detail, service or historical tidbit:
A

We are a family-owned property. My parents built the Viceroy Bali 10 years ago, and as a family we manage the day-to-day operations, meeting all of our guests. This is unusual for five-star luxury travel these days.

Q Favorite drink at the nearest bar:
A

Irish coffee cocktail at CasCades restaurant. Perfect after a nice fine-dining meal, it would put you to sleep more than wake you up because of the warm whiskey.

Q Favorite dish at the nearest restaurant:
A

Beef Wellington at CasCades Restaurant, as it’s the ultimate baked indulgence combining Waygu beef, foie gras, truffle and bacon.

Q The neighborhood shop or boutique you love:
A

My wife loves Uluwatu, which features chic, traditional Balinese lace clothing designed with quality.

Q Best touristy activity or outing to do in your city:
A

Cycling or trekking in the rice fields. If you go down several small lane way paths in Ubud it will open out to beautiful rice fields. The small path through the rice fields will lead you to open-style cafes that have beautiful green views.

Q Best non-touristy activity or outing to do in your city:
A

Sunday lunch at Golden Monkey Chinese restaurant for great dim sum and atmosphere.

Q Outside the hotel lobby, what’s your hobby?
A

Spending the day exploring Bali with my wife and four daughters. Approximately 45 minutes east of Ubud, there is a beach called Virgin Beach, because of its beautiful white sand. The area is not very developed or touristy yet but still provides nice chairs on the beach and local eateries.

Q Your last holiday destination:
A

A romantic European holiday with my wife, including Brussels and Milan.

Q Your next holiday destination, planned or wished:
A

Skiing with the family in Niseko, Japan. An escape to a cooler climate is nice once in a while. It will be the first time my girls see snow.
