Plunging out from a hilltop above Positano, Villa Franca had the good sense to put a J-shaped pool at the tippy top allowing for 360-degree views of the Amalfi Coast’s dramatic coastline. Their Li Galli Restaurant is right there serving up prawns and risotto and crisp, cold champagne.

With only eight suites, The Vasilicos Santorini provides a rooftop pool more private than most—it’s also one of the largest lining the caldera. All the rooms come with their very own Jacuzzi plunge pools too. The view’s not half bad either.

There’s a 25-yard indoor saltwater lap pool, as well as plunge pools, but the real showstopper at New York’s The Equinox Hudson Yards is the one on the terrace.
